A Chocolate cake recipe handed down through the generations.


Now! it is official five generations have made this delish!!! chocolate cake that has been handed down through the generations and time.

This little darlings great great grandmother my grandmother made this cake and now you are welcome to also whip it up and enjoy!
CHOCOLATE BEETROOT CAKE with peanut butter icing:

2 cups sugar
1 1/2 cups salad oil (not olive)
4 farm fresh eggs (large)
2 cups cooked beetroot mashed (and cold)
2 1/2 cups plain flour
2 teaspoons bicarb (fresh is best)
2 teaspoons salt
1/2 cup cocoa
2 teaspoons vanilla

Mix together sugar, oil & eggs thoroughly sift flour, soda, salt & cocoa then add alternately with mashed beetroot and vanilla to oil/egg mixture.
Place in a prepared 23 x 33 cm cake tine bake at 180deg c for approx 45 min.

Peanut butter icing:
1/2 cup peanut butter
1/2 cup butter (or margarine)
3 cups icing sugar
dash of milk
combine peanut butter, 1/2 cup butter & 3 cups icing sugar with little bit of milk to make a good spreading consistancy.
spread over the cold cake lashings of it is good!!!

This cake keeps moist for the longest time, tastes devine and even the 5th generation thinks it is a winner. I will add I put the vanilla into the mashed beets as this helps to get it evenly through the cake.

I realise this is a serious recipe, Lee-ann, but I told my husband about this cake and when he stopped laughing he said, "Ask her if she's been watching the Vicar of Dibley?"

Not sure if you are familiar with that English Comedy show, but there was a lady named Letitia who would always bring supper to the Parish Council meetings using way-out mixtures, like sardine and chocolate sandwiches, or carrot and popcorn, or any other unlikely combination you could think of.

Alice lol lol lol! yes I do know the Vicor of Dibley and love the way out foods the lady Letitia brings to council.

BUT.....you tell your husband it is the BEST! chocolate cake this side of the moon lol lol lol.

I loved it as a little girl but when I got older and knew what was in it I was not impressed but then as a mother and gran I made it and you know it is a great idear, even a restaurant a friend had put it on the menu for afternoon teas.

Tell your hubby next time you are up this way! drop in for an earl grey and a slice of chocolate beetroot cake!!! lol lol lol lol!

As for your Chocolate Beetroot cake, well I am going to take your word on it. I can't get over the combination of ingredients, but it must be wonderful if 5 generations have enjoyed it. Thanks for sharing :)

This has been a most unusual season for New England in general and specifically for New Hampshire. Torrential May rains and lots of flooding in NH; my school was closed for 8 days because of flooding. June has been wet wet wet and some days it feels like living in a rain forest. Just now, the last 4 or 5 days have been rain, drizzle, sockin fog, gray skies........

But today the sun is trying trying to come out stay.

And the best part? We have the greenest grass and luscious leaves on the planet!!!!

OK, I'm glad Vicci asked first so I don't feel so foolish, but what is beet root? Everyone else seems to know. I love chocolate & peanut butter so I don't know why I never thought to add peanut butter to my frosting before! Thanks for the great recipe.
